I read a book a long time ago that said that feeling was your soul/essence astral projecting from your body and the jolt was that essence snapping back into your body

Good question!
It always seems to accompany a mini-dream, of stumbling or falling.
I've heard it's because when the muscles relax too quickly, the body loses equilibrium and triggers the reflexes that help one to recover balance when falling.
I'm going to have to watch this question, as I've wondered about it myself.
