Human feces should be brown. They should also hold together and be denser than water (sink).
Food coloring (green at least) and other non-digestible pigments will pass straight through to your feces.
Plant fiber (cellulose) does not digest and will pass though your body unchanged (corn, paper, unchewed pumpkin seeds, etc) This can change the color.
The color is due to the make up of the stool which is primarily broken down red blood cells, bile, fiber, and bacterial byproducts.
When your body is not working correctly the product will not come out right- this is a sign of physiological problems or infection.
Newborn baby feces are almost black and tar-like as they do not produce significant bile. As they nurse they have a yellowish stool (a highly efficient diet).
Green or yellow stool in an adult is a sign of rapid transit through the intestines.

I seen white poop, and yellow poop before and that is a sign of illness. I haven't seen red yet, and that is not a good sign either which means a bleeding intestines or so. Majority of the time it is either light or dark brown or just plain brown. I tell ya, I hate looking at it and its smell, but some times you have to make sure you aren't crapping wrong, otherwise time to see a doctor which I really don't want their attention to my *** with their fingers. I really don't want to think about it. Somebody get me lot of beers to get these thoughts out of my head.
