Work to change your situation not avoid it. Avoiding it gets out of one meeting. If you get yourself out of too many meetings you could also be getting yourself out of a job.
Go to the meeting. When you signed up for the job it should have been clear that this was part of the deal.
There are probably other people at the meeting that don't want to be there (maybe that's why they complain about things so much). Get your heads together with them to work out how you can make the meeting more effective or unnecessary.

First, when was the meeting scheduled? If they told you six months in advance, you can't say that it coincided with something else. You really can't say that it was an emergency, not if you told him several days before the meeting. What you could have told him was that on Sundays you go to church, and he should have honored that, no questions asked. Remember the Sabbath day... no work!

helping your mother/father/aunt/sibling move accross your state. everyone moves on a weekend, watching your little cousin/sibling/neighbor (babysitting) while they go out of town for a sick relative, keep it mundane but shift the focus from you, basically blame someone else, that way you won't be required to come up with details

Tell him you are going away for your brothers, or nephews, or someone Bar Mitzvah (If you are Jewish).

good friend / relative had a baby and you already made arrangements to go. make sure its several hours away that you would be too tired to go out and back the same day, also be prepared to answer boy? girl? name?.........most won't get into those details (especially males, sorry but true), but best to have the answers
