Yes you can -- the Hometown Buffet changes over for dinner at 3:30 PM Monday through Saturday.
What this means is that the price at the register changes to the dinner price at 3:30 PM and the food at the buffet stations are changed over at that time. In other words, the time you reach the register determines whether you pay for lunch or dinner.
If you are lucky enough to come in like around 3:00 PM -- you can go ahead and pay the lunch price and then enjoy some of lunch entrees before getting ready for dinner at 3:30 PM (you'll see them change out all of the food in the buffet at that time). You then simply go and get another serving, which is dinner.
Be warned though, especially on Saturday Afternoons, people know of this trick, and at least the Hometown Buffet near my house, the line will be VERY LONG AND OUT THE DOOR starting a little after 3:00 PM as people try to get dinner at the lunch price.
So if you are lucky to be the person who gets their meal rang up by the register at 3:29 PM -- you get the lunch price. If your unlucky and reach the register at 3:30 PM -- you will have to pay the full dinner price. I've see a lot of anxious people right before 3:30 PM hoping and praying the person isn't slow in paying at the register so that they can get to the register by 3:29 PM and get the lunch price.

Yes, go with a group around 2:30 - 3pm and eat slowly. Around 4:30 all but one of you go to the bathroom and every 15 minutes rotate the person at the table. then, when dinner's ready. eat

Ive pondered that question several times myself, i think as long as u get there like a half hour or hour before dinner starts, better pace yourself so youll still have room for the prime rib when it comes out at 4
