Iodine is used in the thyroid. It's an endocrine organ in the throat and produces thyroid hormone.

The thyroid hormone is produced as a dimer of tyrosine (an amino acid) with one or two iodines attached. eg. T3 (the most active form) has 2 on one tyrosine and 1 on the other, and T4 (converted to T3 at the target site in the body) has two tyrosines with 2 iodines each.

An abundance or lack of iodine in the diet can lead to metabolism problems and goitres. Search on this and you should find stacks to put into your paper :)
