Whether you choose to remove the fuel or not, it is imperative that you add Sta-Bil to the fuel and run the car long enough for that additive to make its way into the engine. Drive it at least 20 minutes to heat everything up and burn off any moisture that might otherwise rust out your exhaust while it sits there. I would trust Sta-Bil for one year.
Longer than Winter storage: Removing fuel is a pain though. You didn't mention carburator or what kind of intake, but the tank and intake needs to be empty. Then without fuel and without the spark distributor wire, you spray Fogging Oil (comes in a spray can) into the intake so it coats the cyclinders while you crank it for about 5 seconds.
Your battery will go dead, so you might as well disconnect it. (Make sure you know your radio unlock code if you have activated this feature, otherwise you'll be paying the dealer to unlock it.) They make special trickle/float chargers. But if this is a one time deal, it'd probably be cheaper to just buy a new battery when you are ready to get it going again.
If you really like the car, wipe down the vinyl with Armor-All or similar. Jackstands can support your car off it's wheels to keep them from degrading faster in one position. (Again only if more than just the winter.)

With a full tank of gas add a bottle of fuel stabilizer/antifreeze. By making sure the tank is full will prevent moisture (water) mixing with your gas. Remove the battery and store it at room temperature on a piece of wood; this will prevent the battery from losing its charge. Also, if you can jack the vehicle off the ground and rest it on blocks; this will prevent flat spots on the tires.

The best thing to do is remove all the fuel from the vehicle. Old fuel tends to gel a bit and that might clog your carberator the next time you attempt to start it

You can use a product called Sta-bil (I think that's it) found at any parts store.
