If you mean the crime/caper genre, you might want to check out "Layer Cake," with Daniel Craig. I thought it was excellent.

If you mean films that keep pulling the rug out from under you, and then hit you with a surprise ending, you might want to check out "The Illusionist" and/or "The Prestige," two films with similar themes/settings that both have nifty conclusions.

There are several classic films that fit the category... Hitchcock's North By Northwest, and The French Connection come to mind.
Also see American Beauty, The Sixth Sense, and Minority Report, Twelve Monkeys, Donnie Darko, Pulp Fiction, Point of No Return for similar circular plot roller-coasters.
Sin City (also Bruce Willis), for a surreal, comic-book look at the crime underworld.

Lucky Number Sleven- It's an awesome flick and is definately in that genre.
Resevoir Dogs
The Departed- this is still in theaters, I thought one of the best movies of this year.
