Let's say you wanted to find out if I ate McDonald's for dinner yesterday. You find a French Fry container in my trash can. That's evidence. You then go to every McDonald's in a three mile radius of my home and work and security cameras show me ordering food and eating fries out of the bag. That's proof.
It's not what you know, it's what you can prove. The evidence could have come from another person at my house. The proof(tape) clearly shows it was me.

No it's not. In my mind evidence can just be something to help prove your argument. Proof is something that ACTUALLY proves an arguement.

Well let's put that in a form of a statement "I have clear proof of his guilt." "So your saying you have evidence that will prove him guilty?" Umm I'd have to say YES
