For example, in Madonna's song 'Hung up', what does this adjective mean?
'Every little thing that you say or do, I'm caught up, I'm hanging up on you'
And be hung up about something? Just read an example in a book today, but can't remember it now.

To be hung up about something means that you are obsessively concerned about it, you are paying attention to it probably out of proportion to its importance and probably to the point that it is interfering with other aspects of your life. This can just be an irritant but it can also be a major problem.

"I'm hanging up on you" means that the person is going to put the telephone receiver back on the cradle and not talk to the other person anymore. Figuratively, it could mean that the person is simply not going to talk to the other person anymore--the relationship is over, in other words.
