You don't have to take off the squirters because they can mask over them. You should be able to just unscrew the antenna and the painters can mask over the base.
Removing the squirters will leave a hole because they mount through the hole from the underside of the hood. Leaving the holes open shouldn't hurt anything because they can mask them off from the underside to keep paint from entering the engine bay. If in doubt you can ask the shop doing the paintjob. They should be able to tell you what you need to do prior to bringing in the car.

The antenna should unscrew from the base...just twist toward the left toward the bottom of the rod. The windshield wiper fluid squirters should just be tapped...You really don't have to remove them. It won't affect the paint job.

Don't know off-hand, but the people doing the paint job should be able to tell you if you need to take them off. Most don't require that, I don't think. If they are professionals, they know how to work around it or take it off.
