You won't find completly accurate statistics on the least croweded days as there are a lot of factors that can go into this. In general Non-Holiday Periods will be less crowded than Holiday periods. Since December is a Holiday Period it was more crowded. Weekdays will be less crowded than Weekends.
A good non-scientific thing to do is go to the Disneyland.com web site and look at the Calendar page. They list the hours for about 3 months ahead of time.

If the operating hours are 8am-Midnight expect it to be busy. If they are only 10am to 8pm then expect it to be lighter crowds. For the times in between the general rule is the more hours they are open the more crowds they expect.

Disney does not release park attendance numbers, so you will never find "real statistics". Instead, you will find anecdotal evidence.
Generally, the off season is anytime school is in session and during the week. The tradeoff is that parades and fireworks are not regularly run during the week during off season.
Now through Spring Break would be a good time to visit (avoiding 3 day holiday weekends) and then through the end of May. Then after summer, September through October are pretty good. November starts the holiday crowds which really pick up mid-December.
Additionally, RideMax is a subscription website that puports to be able to plan your schedule to maximize ride time and minimize waiting in line.

Attendance will vary day by day. I've found that the best days to go are mid week while local schools are in session. You couls also contact the park itself and see if there's a day when they're not expecting as many guests. You may have to contact group sales and say there's 10 of you. They might help.
Unfortunately, because of the appeal of Disneyland, you're never going to have the park to yourself. So when you're in line, just remember: It's the happiest place on earth.

If you went around the holidays in December, you're probably out of luck. I went in mid-November mid-week, and it was perfect. I tagged along with my girlfriend for a neuroscience conference so we didn't have much time for parks, but we did Epcott & Magic Kingdom in 1 day w/o missing much. Still plenty of people, but it was manageable. It was also in the middle of the week.
I tried looking on the Disneylandwebsite, but it's as crowded as their parks. Error message said the site was too busy to process my request. My request was 'let me see your homepage'

Anyweek in the middle of November. The one in Orlando is darn near vacant in the middle weeks of November (max 15 min wait). I can't see why Cali would be different.

in my own experience, tuesdays and wednesdays are the least crowded in the week, as for the yearly estimation, spring is less crowded than in summer.
