Lemon juice. Squeeze some fresh lemon (works better than the bottled stuff) over the fruit. It will prevent it from turning brown.

They sale this stuff in the grocery store that is made to help fruit keep longer, it seems like it is either in the isle where the sale jello and canned fruit. It may be called fruit preserve, I am not exactly sure, I just know my grandma use to use it.

Cling film / refrigeration. Just a guess, I don't have much need to preserve fruit salads. Buy a big tin.

Spritz some lemon juice on it. I use the small lemon juice containers that are available in the fruit section of the supermarket.
