Copper is a far better conductor of heat than steel. So some higher quality cookware uses copper for the bottom to improve heat absorption.

The downside - copper is expensive, particularly today, when compared to steel... so such cookware is usually high priced.

Works great though, and since people hock all sorts of things to Goodwill and the Salvation Army... you can pick up an awesome copper bottomed pot or pan for a fraction of the cost of a new one...

I think it's because copper is a better conductor of heat. So the temperature of the bottom of the pan increases rapidly and makes the cooking more efficient.

Basicaly, copper is a better conductor of energy. It is the same reason copper heat sinks are used on gaming computer processors and video cards.

To place it as simple as possible. Copper sucks up heat the best.

Simple - copper heats up faster, and distributes the heat better, than steel.
