Salt will dry you out. This is why you can not drink salt water and survive on it.
The amount of sugar you can handle is dependent upon you body and the amount of insulin it can make. you can look up diabetes for more information on this.
Fat, has no nutrisional value. It does not get broken down and will clog your ateries and cause hart trouble such as strokes or hart attacks.

Sodium is the part of SALT that increases blood pressure.
The most common cause is eating too much salt/sodium. When high blood pressure is not controlled, it can lead to a heart attack, stroke or kidney disease.
SUGAR is absorbed into the bloodstream too quickly which make the pancreas produce too much insulin which removes too much blood sugar. So eating too much sugar actually causes low blood sugar, as well as leaching out B complex vitamins and encouraging the body to excrete chromium - a mineral linked to diabetes and arteriosclerosis. The initial energy boost is quick but so is the let down leading to a craving for another boost.
The following are conditions which are clearly related to excess sugar consumption :- Allergies, catarrh, constipation, depression, diabetes melitis, fatigue, migraines, heart attacks, hyper-activity,low body weight, mood swings, muscle weakness, obesity, PMT, schizophrenia, skin eruptions and violent behaviour.
Eating a lot of saturated FAT can increase the amount of cholesterol in your blood. People get coronary heart disease when the arteries that provide the heart with blood become blocked or damaged by a build up of deposits containing cholesterol.
If the arteries become so blocked that the heart cannot get enough blood, the heart stops beating. This is a heart attack.

See the movie SUPERSIZE ME by Morgan Spurlock. There are about 23 minerals needed for health. At least 8 amino acids about 20 vitamins at least three essential fatty acids. Basically even with all this knowledge, we still have difficulty arranging a diet without real fruits and vegetables. What is sold for "salt" is sodium chloride. the sea has 14 minerals(we need most of them). Too much refined carbohydrate causes a "B" vitamin deficiency, which, if not dealt with, leads to mental imbalance.

Watch Gillian McKeiths programme tonight, try googling in the words 'affect of diet on mind' and the other items on your list.
There are loads of sites that can help.
The point of a project is to get you to learn how to research for yourself, so that when you want information, you will know how to do it for yourself.

In the short term, too much sugar and/or salt can make you hyperactive. In the long term, they affect your heart. Too much fat makes you fat.
