I'm pretty sure its because of the configulation of the water molecule. They are dipoles which means there is a positive and negative charge in the molecule due to the 'v' shape of 2 hydrogens bonded to one oxygen. With these opposing charges the water molecules bond together which i guess holds a droplet of water together. That was an educated guess from high school chem.
