Travel from London to Paris on Eurostar. Once in Paris take euro train down to Spain if you are in a hurry. If not, take your time and take the bus and do a few stops on the way as the trip through France is amazing.

Go by Car! Its a grand drive, though you will need to stop overnight in France. Calais, straight south avoiding Paris. You will get to drive past the Auvergne volcanos and over the awesome Millau bridge. Don't miss the opportunity!
