Spam, as it already comes in handy slices and should be easy to constuct a briefcase from. I would also think it would be water resistant to some degree.
On the other hand you could always try hot dogs and sew them together for a unique looks.

Rump steak for the sides, streaky bacon for the hinges and a sausage for the handle. Remember to line with grease proof paper so your documents don't get ruined.

Wiltshire ham off the bone, you can have it cut to any thickness, its very plyable, smells good, most people like it, therefore you could be onto a winner making your briefcase out of it as everyone will want one.
