They are the lady finger variety same length as a normal eggplant but thin. The last one i thought was ripe was very large and had turned completely purple on the outside but was very green inside. How can you tell when they are ripe?

I've always judged by the softness of the plant's flesh at the top near the stem. If it's very firm there, it's not ripe. If it's soft but not mushy, it's just right. That's what my little old lady grocer landlady taught me when I lived in France...:)

you want to know when it is right to use,the last one you described sounded just right to cook,leaving it on the plant to get too mature & it will change both taste & texture,try one when tender & you'll be convinced.

When it is firm, shiney, and the calix (blossom) has fallen. The smaller, the better.
