my niece used the diet coke and mentos route.
She took a 2 liter of diet coke, duct taped it to a platform. She used expanding foam caulk stuff, your dad may no what it is, it is used for building. Well, she used it to create a mountain form around the bottle. It dries quickly I think. she left the top of the bottle where the cap is uncovered, because you have to open it later. After it was formed and dried she spray painted it. First a brown color base coat, then a little Grey for a rock look. a little green, for a grass look, then some white at the top for a look of snow.
At school the day they got to erupt them, her dad strung some mentos together, she dropped them, and the coke shoots straight up in the air. It is so cool.
She had the best volcano, and received an "A" on her whole project.
Just make sure they erupt them outside.

Tried, tested and true:
Create a papier mache vulcano around an empty paper towel roll that is attached to a small one serving yogurt container filled with baking soda. Decorate it at will, perhaps a little village at the base of the mountain, trees, etc. Dye some vinegar with red food colouring. At the time of demonstration, slowly pour the vinegar down the paper towel roll and watch the eruption. Super fun.

mold the chicken wire into a rough shape for your mountain.
cover it with paper mache'.
apply spray paint.

there are several ways to make it erupt.
placing a plastic container into the crater at the center so that it will hold liquid. and then adding dry ice to water will create a misty fog like steam eruption.
food coloring added to vinegar, and then dumped onto baking soda will produce a foaming eruption.
when i was in elementry school, i ran 1/4 inch air tubes throughout several areas of the model. then covered teh openings with some loose sand and gravel. i think that i had 20 or 25 tubes going throughout the volcano, most of them near the top.
then in a tragic erroe in judgement i used katchup for my lava and pumped the tubes full of the katchup.
i used a 2 handed bycicle pump to create the pressure to "erupt" it.
i did not test it first.
some of the tubes i had aimed straight out to create a flow down the sides.....katchup under pressure does not FLOW at all.
when i went to set it off i pumped the pump about 3 times to prime it, and then i put all of my weight onto it...i was a fat kid. and the result was a spray of katchup that went out over 10 feet in every direction and about 2 feet straight up..
i got the principal. my teacher. 3 judges for the science fair. and i dont know how many students and parents...and a detention.
DONT USE KATCHUP FOR LAVA.

bi-carb soda and white vinegar. if you had them together they bubble over...then if you add a bit of red food dye it will look authetic
