If you are using chopped onions, make sure sure they are chopped very fine. I don't know your recipe. Try this. Ground beef, lean, breadcrumbs, one or two eggs depending on the amount of meat, Parmesan cheese, chopped onions and fresh parsley, salt and pepper. After mixing, and forming them into balls, keep rolling them till for a smooth, sticky surface. Fry them in a med hot oil mix (1/2 olive oil). till you almost have a crust on the outside. Should be the best. Now, if you're talking about something else..............NEVER MIND !!

Maybe because you allowed them to soak too long in the balls' sauce huh?

Your meatballs have testicular cancer. Chop them off and eat them with spaghetti.

Well . . . as long as there're only two lumps, don't fret.
