x = 3 and -1. Try them both and they work!

You didn't square both sides properly. You have to use the formula a2 + 2ab + b2.
Here's the work:
2x+3 = 1 + 2sqrt(x+1) + (x+1)
2x+3 = 2 + 2sqrt(x+1) + x
2x = -1 + 2sqrt(x+1) + x
x = -1 + 2sqrt(x+1)
1 + x = 2sqrt(x+1) then square both sides
x2 + 2x + 1 = 4x + 4
x2 - 2x - 3 = 0
(x - 3)(x + 1) = 0
x = 3 and -1

From what I can tell, if you square the total equation you should get:

2x+3+x+1=1
3x+4=1
3x=-3
x=-1
