They are yelling out the play's numbers. It's kind of cool. The teams kinda have like secret codes for each other. Like if your teams is down and u need 1st down in final minute and rush for 20 yards( just throwing out a number) for TD you can see the coach on the side line like 90% of the time doing secret signals to the players. I've seen Jeff Fisher do this and the Titans came back and won that game. Go titans! Go vince!

Each play is coded into certain numbers. The numbers are explained in a sheet which is attached to the quarterback's hand. When the offensive play caller (sometimes head coaches) call the play, they tell the number to the QB and that play is executed. Sometimes based on the defense, the QB changes the play on the fly.

did you mean what numbers they yell before the football is snapped? if so its called a snap count and it is designed to keep the defense off track,or as well as letting the offensive line know who or where the ball is going to(in case of an audible). I've never heard numbers called before a game unless of course the announcer is calling the starting lineup. i hope this helps.

Its the offensive cadence. Most quarterbacks use numbers and words mixed together with each other (Steve Young. 347, Razor Razor). Some use numbers and colors (Trent Green, Blue 75, Red 80). Peyton Manning has an interesting cadence. His is a combination of female names. Listen for it this weekend if you can hear it. He'll us "Kelly, Kelly", "Lisa, Lisa". Just kind of interesting if you ask me.
