It's really going to depend on what you like and how you like to play. I'd probably suggest doing something totally different from your current level 60 and trying a caster out. Mages can be a ton of fun, as long as you don't mind dying a LOT. They do tons of damage, but if you make a mistake or your timing is off, or anything else goes awry, you often end up hurting. Priests specializing in shadow talents are also very powerful and a lot of fun, though if you like raiding and doing instances you may have to respec in order to heal better (some raiding guilds require this, as I'm sure you know). Warlocks are a lot of fun as well. I haven't tried the Demonology tree so I can't really comment too much on that, but Affliction is pretty cool as is Destruction.
I'd suggest flipping through the descriptions on the website to see if anything just jumps out at you. All of the classes are enjoyable to play, though depending on your playing style, some are more fun than others. Good luck!

I have a 60 hunter and my alt is a rogue. If you are playing a rnaged DPS class now and want to widen your experience either a melee or healer class is a good change of pace. That being said, WOW does a great job of making each class very unique and with different enough skills that they are all a new challenge.
My best thought is to go with what fits your personality. I just loved the idea of sneaking up on ppl and assasinating them, so a rogue is my choice. No real thoughts on speccing.

I would go with a Troll Priest. Everyone is always looking for a Priest in a group and the orc side is great. It should be a nice change from a hunter.

Try a rogue... they can be ever so much fun. Stealth mode is very fun... you can sneak right up on unsuspecting bad guys, pick their pockets and then garrote or ambush for impressive damage. Stealth allows you to go places you couldn't go by yourself ordinarily. Night elves make good rogues, so do humans. Specialize in assasin skills and subtlety. Have fun.

hunters are a ranged dps class...so i would either try a melee dps class or a healing class. If your gonna do a healing class I would wait for BC to come out and do a Draeni priest or palli...due to good racial abilities.

If you're alliance, go with a pally. It's really fun to pvp because you basically have 2 lives.
Otherwise, I'd choose mage or warlock, because they're casters and so you'd understand how to play them (preists are boring though :P )
And if not that, I'd go rogue. Sneaky and fun :]
