I'm being interviewed for a bilingual communication aide. Should I speak in Spanish and wow them with my fluency? Should I make a joke? Be totally serious?

be yourself, be prepared and remember to ask them questions so they know you were prepared..

This is seriously a good idea.If the person interviewing you "talks with their hands" or makes gestures; What you need to do is: in your responses make an opportunity to mimic those gestures. I have used this, and there are interview books and videos that tell you to do the same thing.
Why? You are creating a "mirror" image of the interviewer. In their subconscious they become more engaged because they feel as though you are a reflection of them. They feel more at ease now, because they see a bit of them self in YOU!
And of course a) be your self and be real b) be interested c) stand out and make it known how different you would be than anyone else. Good Luck.

Before you even go there you need to know that you are a good candidate for that job. If you know you are, then your main job will be to convince the interviewer(s) of that fact. Try to answer any questions they throw at you with examples of what you did on previous jobs. I always try to ask one or two questions as well. One good question is to ask them what are the most important qualities they are looking for in the successful candidate for the position. When you get that answer then you can give further examples from your work experience or your personality that show that you possess those qualities.

Instead of talking use sign language the whole time.

just be yourself ,over impressing them will not get you the job.
