When we went, our son was 3 years old. Disney World of course was great, even for him, because they had a lot of rides geared for younger kids. He also loved Sea World. We stayed in a hotel called Diplomat Inn. He loved that, because one of the walls of the room was all glass and he could look down on a waterfall and a food court in the middle of the hotel. St George Island in the Panhandle. Rent a house, or book an oceanside condo/hotel room. You can rent a kayak, jet skis,bikes and fly kites on the beach. We see lots of dolphins - close up! - when we go there (5 years running now) There are a few restaurants on the island or drive into Apalachicola for dinner at Boss Oyster. Take your three year old to the estuary walk, collect sea shells on the beach - sugar white sands. Every house on the island is truly less than 10 minutes to the beach by foot. You are less than hour away from Wakulla Springs. Take the glass bottom boat ride and or go for a swim in the springs. Wakulla Springs is where the Tarzan and Creature From The Black Lagoon moveis were filmed. Your child will love it.
It is a beautiful part of Florida.

Sea World and Disney are great for young kids. Perhaps stay three days in Orlando (you will NEVER finish seeing all the Disney Parks), but then take a side trip to Clearwater Beach, Sanibel Island, or up to St. Augustine. All have nice beaches, and are good places to relax. Book the other two days there.
It will be a few hours drive back to O-town to catch your flight home, so don't forget to figure drive time!

I have to concur with the St. George Island recommendation. That island is beautiful! And they have some really good restaurants and fun shopping on that tiny island. The beach is simply breathtaking!
Siesta Key Beach in Sarasota is also highly recommended. It is a quiet beach town with the prettiest stretch of beach you've ever seen. And since its on the gulf side, there are hardly any waves - and it stays shallow for a long way out - so its great for families with small children.
Another great location is Anastasia Island in St. Augustine. That beach has these little inlets which basically look like man-made swimming pools. A little sandbar breaks off the rest of the ocean from little pools - Perfect for little ones to play in - its like their own kiddie pool!

There's a bunch of nice beaches there. As far as i know, and as many times as I have been there, they are kid friendly (minus Miami). St. Pete, Clearwater beach are both in the same area (Tampa Bay). Clean area, safe, beautiful beach, great places to eat, tons of scenery, historic places, and nearby city Tampa has a lot of attractions that your three year old would enjoy (Busch Gardens might be good for that too).
