Create a single folder that you want to use for synching photos somewhere that you can easily find it (I suggest calling it iPod, iPod Photos, or some other easily identifiable name). Copy (do not Cut/Paste) any photos that you want to add to the iPod to this folder. Now, go into iTunes, hook up your iPod, and wait for it to tell you that it's done updating. If you have iTunes 7 installed, click on the iPod entry on the left, which will bring up all the Sync tabs for that particular iPod. Click on the one that says Photos. Check the box next to the "Sync Photos From:" entry, and then use the pull down entry form next to it to browse your way to your designated iPod photo folder. Click the Apply button at the bottom, and it will automatically upload photos from that folder until you've got them all, or it runs out of room (music and podcasts will always get priority over the Photos option, so no worries about being told that you don't have room to add a new CD because you've got too many pics on it).

If you want to remove any of these photos at a later date, either deselect the check box to remove everything, or delete any individual photos that you don't want (this is why I suggest setting up a designated folder just for iPod pics and copying pics to it, so you don't have to shuffle pics back out of the primary folder).
