This one is easy...if you know where to dig around in the iTunes program. Open your iTunes program. Pull down the Edit menu and click on Preferences. Then select the Advanced tab, and then the Importing tab that pops up below it. Change the Import Using option to MP3 Encoder, click OK at the bottom, and anything you import from a CD will now import as MP3 format (if you don't want this to be your long-term default format, remember to change it back after finishing this process).

Now, to convert your existing songs to MP3, or more accurately, to have iTunes create MP3 duplicates of all your existing song files, highlight all the songs you want to convert to MP3. Then pull down the Advanced menu and select the Convert Selection to MP3 option (this will automatically change to whatever you've selected as your default format before, so if it says something other than MP3, you need to go back and repeat the previous set of instructions to change it). iTunes will then spawn a duplicate set of files in your iTunes folder (My Documents/My Music/iTunes if you're running a PC) in the MP3 format. The downside here is that if you want them to be easily accessible for regular music swapping, you'll need to clean them out of here and put them somewhere else (the My Music folder is as good a place as any).

Burn them to a CD, then re-rip them back as mp3's.
