It is the coil containing a cold fluid in the refrigeration cycle. Air that you want to condition is passed over the cold coil, and as the liquid in the coil absorbs energy from the warm air it changes state into a gas, hence the name evaporator.

The other coil, the condenser (where heat is rejected back to the environment), is where the gas changes state back to liquid.

Liquids are incompressible (well prety much) the evaporator ensures there is gas entering the compressor. In some cases it is also combined as the heat exchanger for extracting heat from the system to the refrigerant.

If you mean the expansion valve? this is where the compressed refrigerant has its pressure dropped to decrease its temperature via the Joule-Thomson effect.

I agree with most of the answers, Just wanted to throw this in. Simplified - - As the liquid refridgerant turns to a vapor, it gets cold, As with most Cans of just about anything. Spray it long enough, it gets very cold

It does the actual cooling. When water evaporates, it releases heat. That is what cools. When you sweat, you are cooled by it evaporatiing on your skin. A/C's just do it in a much more efficient manner.

Yeah. It's pretty interesting. The system doesn't cool the air, it removes the heat.
