From a good college, almost anything! English majors are great for law school. There are editing type jobs, teaching. If you like travel, you can teach English in a foreign country. IF your editing/writing skills are up to par you can get a job as an editor for any corporation

One thing to do is get an internship in your junior year in your preferred field - for example, if it's publishing or editing, you often can't break into it without an unpaid (but often for credit) internship. All my English major friends are in publishing.

Double-major in education or otherwise get certified to teach.
