You don't have to cancel them, just defer it for a year.
Ring up your university and tell them you wish to defer for a year.
Good luck, enjoy your gap year, i am sooooooo jealous.

I am not sure about UK but in other European schools, if you have been accepted for an academic year and you want to defer it for the next year, you can. You just have to write a letter to the admission or registrar's office stating to that effect.

Anyway, you can always check the school's website or even contact the registrar for info. Sometimes this question is included in their Frequently Asked Questions.

Usually you state this on your UCAS application. Call UCAS and see what they can do for you. I think they will probably ask you to contact the Unis concerned on your own and ask them etc.
Good Luck
