Often the difference is in local usage. Where we live, a female chicken is a hen, but many other female birds are also hens. A chicken is a domestic fowl, especially when it is young. Older domestic chickens are hens. Often baby birds of any kind are called chicks, which sort of adds to the confusion. The females of lobsters and some other fish are also called hens.

A hen is the female of any fowl (chicken, turkey, pheasant, etc.) and a chicken is the specific type of animal. Most people take it to be a female, but really it isn't referring to the gender.

A hen has wisdom and is aware of her role in the story of life. She has experience and knowledge and is not prone to make errors common to youth. A chicken, is brash, inexperienced, unaware of the consequences of risky endeavors. Chickens are young and are prone to mistakes and bad judgment that are part of growing up. Chickens are not always destined to become a hen, it depends on their willing to learn from their elders, others, and personal experiences (bad or good). They may run and they may be afraid, but the smart ones know when those actions are necessary and when they are a risk worth taking.
