When you see white in your underwear, it's vaginal discharge. This can mean your period will come soon, or it can just be that your vagina is cleaning itself. I had vaginal discharge 4 or 5 years before I got my period. Your period itself is ALWAYS red or brown. If it bothers you, I would suggest wearing a panty liner daily so it doesnt get directly in your underwear. Also, hot food has nothing to do with your period. You get it when your body is physically mature enough to reproduce.

no. your period is red or reddish brown to brown. Its tissue that your body sheds so its pretty consistent on color
