luke kept postponing the wedding and then his daughter came into the picture. he used her as a reason to hold off on getting married. lorali got tired of it and asked to elope and luke told her no. while she was upset she ended up sleeping with christopher. she told luke after he asked her to elope with him and he was furious and stormed off. they broke up and she ended up with christopher.

Because Luke wasn't really "there." Not that he didn't (and doesn't) love Lorelai, but to Lorelai, it seemed like he wasn't completely in the relationship. So when she said that they should elope, and he turned that idea down (saying he wasn't ready) she went to Christopher, which ended the relationship.
