If I can talk to people and look them in the eye while talking, but not talk too much - does that mean i'm shy or just quiet/reserved? With certain people i tend to talk more, with others i'm extremely quiet

I am the same way.
You're probably just on the quiet side.
I admit being shy with people that I don't know - plus I'm just selective on who I speak to. I'm not ashamed of it and I don't think its a problem.
People just have different styles of personality.

probably you just know when to open your mouth. maybe you're more comfortable in some people. or maybe you just don't want to talk at all. I'd say, reserved.
