Well you figure you have to cut out the old and make sure that it falls on the rafters then cut out the new piece...then finish it....(which requires more than 5 minutes) then dry and sand.....then you can paint it roll on a texture or do what they refer to as stomp a texture in it.
But I would say 4 hours or more....drying mud takes the time.

It will take several applications to get it done.
1. Replace Sheetrock
2. Tape Sheetrock Joints
3. Mud over tape and joints
4. sand joints when dry
5. apply texture if any to match ceiling

It depends on skill level. A professional Should be able to cut out the damaged portion, replace and screw , tape and plaster in about an hour. After it is dry i gets sanded and textured. And then after that is dry it needs primer and paint. This would take minimum of 1 1/2 days to completion.

it takes me about 10 min. first square out the hole then cut a section the same size use a 1 x 2 for stability and mounting. groove edges for compound then compound (lightweight) and tape. level compound with blade and let dry. 10 min. when dry use compound to smoothout . if done right shouldnt need sanding.

.a few hours you may have to make the hole a bit larger so you will have dead wood to attach the new rock to....it will take longer to finish it most times u have to put 2-3 coats of mud on it..and depending on the temperature and enviroment your lookin at about 12 hours for each coat

lol some of these answers....at least 3 days....lets asume you have all materials...cut out bad section,make sure you have rafter to attach new piece to...you might have to cut out the bad section larger then the hole you have..then install new piece of drywall...tape and mud...this is a process that you'll have to do at least three times to get a nice finished look...give at least one day for each step when mudding..(dry time for mud)by the third day you'll see it coming together nicely,then you paint it,remember to paint with a primer first..

if your handy you should take your time and do it right make sure you have good wood to nail to (also wood on existing drywall) after replacing with new material apply tape and thin coat of mud not to heavy for it will crack if to thick let dry completely knock off any clumps lightly sand and recoat with topping or all purpose mud let dry sand again if you are arent satisfied with what you did recoat and sand prime, paint
