"The wolf is a symbolic figure that represents the deepest part of Cloud's psyche. It appears in response to some burden that Cloud is carrying deep in his heart."

The wolf is the symbol of Cloud's guilt and grief that he feels BECAUSE of Aerith and Zack's deaths (which he finds to be his fault). It isn't Aerith or Zack's "spirit" - as you see in the ending, the wolf approaches Cloud before he awakens in the Sector 5 Church, and he later sees Aerith and Zack leaving.
The wolf shows up in areas related to Cloud's dark past - on the bluff where Zack was shot down (the resting place of the Buster Sword), at the lake in the Forgotten Capital (where Aerith was laid to rest), and in Aerith's church, where he first met her (officially, not counting the escape from the reactor at the beginning), though you see the wolf dissipate into the light, meaning Cloud was finally able to bring himself out of his state of constant despair.
Again, the wolf isn't the embodiment of Aerith or Zack - just the guilt Cloud feels about the terrible fates that befell them.

I'd say it'd been Aerith because she cares for Cloud but then so does Zack,but I'm really sure it's Aerith. (I've seen the movie loads of times)

Everyone who returned back to Earth/Holy become one entity, however they still retained their individual characteristics.
In the originial Final Fantasy VII game, after Cloud in his mind/what ever defeated Jenova in its Sephiroth form, Earth/Holy healed him, and then attempt to contact Cloud using Aerith (her music was playing and it looked like her hand, though nude).
People who returned back to Earth/Holy are still able to talk with the people who haven't returned back.
Aerith kept chatting away with her dead mother, Ifalna.
The dead husband of Aerith's adoptive mother (Elmina/Elmyra) once asked her to tell his wife he's okay and have returned back to Earth/Holy.
However in recent times, the communication have become difficult, Aerith is having difficulty communicating with them, even to her mother.
Aerith also don't even know what happened to Zack, even though he returned back to Earth/Holy, or didn't he?
