I know what your dealing with. Men are hard to buy for anyway, but if they are the type of guy that my husband is, if he wants it, he's already got it, leaving no chance for sneeky gift giving. Here are two things my husband has really enjoyed that I lucked out with.
First: A picture. Keep it small. For a fiance I might suggest a sexy picture of you or a picture of the two of you together, maybe at the place he proposed (that can be a bit tricky to pull off) or at your favorite place to hang out. Put the picture in a small frame he can keep on the dash of his car and provide a pad of double stick adhesive. My husband loved that one.
Second: Gift certificates are always great for guys but you have to be careful to make it personal. Watch what he has purchased lately and get him a gift certificate for accessories. For example: My husband bought a new palm smart phone so I got him a gift certificate to the local PDA store that carried all types of things specific to his phone.

The simple answer is YOU. Candies, flowers and such mean nothing to a man. Spend some time with him. Give him some loving. Show him how much you love him. That is what EVERY man wants for Valentines Day. My suggestion is dinner, wine and candles, with you for dessert. You'll find him wishing every day was Valentines Day, and you won't get any complaints.

Does he like to golf? A gift certificate for a few rounds at a nice court makes a good gift.
Or a spa treatment for men. They're actually really great. I've gotten my boyfriend a few and now he's started to go on his own accord because he likes it so much.

Cook a nice romantic dinner for him and give him a card or maybe a coupon book.
I always make a candlelight dinner for my husband on Valentine's Day. He looks forward to it each year.

Don't laugh - but more and more manly men are enjoying a day at the Spa...such as Eliz. Arden's Red Door....My son loves it and gets a full body massage and pampering....

Secondly- all those romantic things that women like... most men could care less. Get him a new piece of chrome for his Harley (or whatever hobby/sport he's into)
