I assume that you mean 3 cuts. The key thing is to have each cut affect each piece.
Start by cutting it in half. You now have two pieces.
Make a cut perpendicular to the first. You now have 4 pieces, each one is a 90 degree wedge of pie.
Now here's the tricky part. You want 8 parts, but it doesn't specify 8 wedge shaped parts. Now, cut in a circle about halfway from the center of the pie, all the way around. You will now have 4 inner pieces and 4 outer pieces, a total of 8.

First cut the pie into 4 quadrants with 2 perpendicular cuts.

Then stack the 4 pieces one on top of the other, and make 1 single bisecting cut.

You'll have 8 pieces of pie (maybe slightly squished, but) in just 3 cuts.

Easy. once you think about it.

a pie is has three dimensions so cut an X on top of the pie then cut the pie in half threw the middle (the edge) three cuts eight parts.

Think two layer cake, cutting the X on top of the cake will cut the cake into four parts, but if you take off the top layer you would have eight parts. (top and bottom)

Radius of pie = R
Area of pie = A = (pi) R^2
Cut by drawing a smaller circle of r, such that area of smaller circle = Half the area of the pie = A/2

(pi) r^2 = A/2 = (pi) (R^2) /2
r^2 = (R^2) /2
r = R/sqrt(2) = R / 1.414 = 0.7071 R

Don't move anything

Now make two cuts diametrically at right angles

You have 8 equal pieces of pie

Divide the pie into fourths regularly using two cuts...and then cut a circle around the middle.

A bigger challenge would be determining the radius of the circle to make each piece have equal area. :c)

Cut it into quarters with two cuts. With the third cut, slice it horizontally. This workes better with cake rather than pie.
