It was originally a hit (believe it or not) by Richard Harris (the actor). Donna Summer did a "disco" remake of it.
It was written by Jimmy Webb. He wrote many other hits from that time period including "By The Time I Get To Phoenix”, “Wichita Lineman”, “Galveston”, “Didn’t We”, “Up, Up and Away”, “Worst That Could Happen”, “All I Know” and many others.

They haven't literally left a cake out in the rain. The song is a metaphor for a failing relationship. It's called MacArthur Park. Most people are familiar with the Donna Summer version.

Macarthur park is the name of the song. I don't know about any interpretations, sometimes music doesn't have to mean anything.
