You could check out a band called 'Symphony X', one of their songs called 'The Odyssey'. Also, check out Dream Theatre, the both progressive bands. If you into folk music and want some metal, then check out some bands called 'Turisas' and 'Korpiklaani', they incorporate finish folk into their songs.

Well there is a type of metal which uses Orchestras and/or Opera singers in general, I can list of some bands that make use of violins/cellos and Operatic elements, which seems to be more popular in Europe in general than it is in America

Nightwish (their later albums) - used to use a Soprano opera singer
Within Temptation(bills themselves as "symphonic metal")
Epica
Leave's Eyes - Senses Capture uses a full orchestra
Sirenia - (band creator started out on violin)
Dreamquest (bills themselves as "symphonic metal")

Metallica registered a whole album together with a symphonic orchestra. The album is calle S&M and the orchestra is the San Francisco symphonic orchestra directed by Michael Kamen. I actually like that album a lot.

check out the trans-siberian orchestra, not all of their stuff is christmas. they were originally formed by the members of savatage who decided to put together a project with classical music with a rock twist, their also a great live show. also, pick up metallica's s&m cd, which is them playing thier songs accompanied by the san francisco symphony orchestra. if you find anything else, let me know too, because im a big fan of that kind of stuff

Cradle of Filth & Dimmu Borgir. Their pretty hardcore but they use the orchestra's a lot. I think they're awesome.
