It is possible that he will do so, but unlikely. I've definitely heard of it happening before, but it has never happened to me (mind you, all my tanks have lids) and I don't think that it is a highly common problem.
You could encourage your boss to make a lid of some sort, even out of clear acetate sheet, because the betta is probably more likely to jump out of the tank than the snail ever would be.
Edit: I should note that snails do not "stop short" of the water's surface. Actually, many types of aquatic snails - like mystery and apple snails - lay their eggs ABOVE the surface of the water. So, they are entirely capable and indeed sometimes willing to breach that water surface. It is, however, unlikely to happen.

a snail would be fine in the tank a beta fish will only go after things with tails on them... like fancy tailed guppies and of corse other male beta's. as far as a snail climbing out they do come out of the water about an inch over water level. so if there is no top on the tank make sure the water level is lower then one inch from the top. also beta fish jump... get a lid on it... if they get startled for any reason they will jump. just like anyother fish will. good luck.

No, the snail definitely won't climb out of the tank. Snails naturally feel when they are close to the surface and stop usually before they become exposed to air.
The snail should do fine in the tank. If the betta is really agressive, it may eat the snail. But then, extra protein and snails are cheap.
You should have a lid on your tank though because bettas are known for how much they jump out of tanks.

the snail probably could climb out, but I don't think it would. they can live for quite a while out of water, so if it climbed high enough out of water it would know when to go back down.
however, make sure you don't have anything the snail would climb on top of and not know how to get down from. I lost a snail that climbed on top of a corner filter I was getting a bacteria build up on and died because he couldn't get back down.
make sure though that the tank is able to support both the betta and the snail. bettas should be kept with filters and heaters but it is possible to keep them without, however, snails should not be added to the tank unless a good filter is present.

My local pet store doesn't even keep a lid on the snail tank, so it should be okay. The snail wil help keep the tank clean!

Snails are notorious for escaping tanks. Many people awaken to find their snail crawling accross the room. I know one person who found eggs in her lampshade and her snail was in there all dried up.

Water snails won't get far outside of their environment. They get their oxygen from the water, and essential moisture. If it's a true size beta tank (big as a coffee mug, not very humane, btw), then you shouldn't put a full grown apple or ram's horn snail in there or it will starve. One of those irritating ones that you find on your plants will do.
