To get their heads down far enough, they spread their front legs, first one foot, then the other. Some giraffe (I think maybe older ones) also bend their knees,

yes they do. when they run they bend the knees on their forelegs (legs in the front) the same way we do but their hindlegs (legs in the back) the opposite way kind of like our elbows bend for lack of a better example. It is very similar to the way horses bend their knees if you've ever seen a horse move.
