It's added to soil to control the pH (like many others have said). In areas of the country where the soil is mainly acidic, due to high content of elements such as iron, zinc, copper and manganese, lime (an alkali) will be scattered into the soil to help neutralise the soil, bringing it closer to pH 7.

The reason why farmers do this is because in some areas of the country with acidic soils, farmers may want to grow crops that favour neutral or even alkaline conditions in the atmospheric conditions (e.g warmer, dryer, colder or wetter) of that region. For instance, in an area where soil is extremely acidic, farmers may want to spread lime to reduce acidity slightly for favourable conditions for potatoes- a staple food- to be grown more effectively. Ultimately, it is all to increase yield and quality of yield.

Another use for lime, just so you know... in Scandinavia, a region of Europe that has been affected most by Acid Rain, Lime is scattered into lakes and other water bodies to bring the pH closet to neutral, before re-introducing fish stocks and plants into the ruined ecosystem. It's the cheapest way to clear up the affects of Acid Rain in water, it is the most natural, and most effective too.

Farmers add lime to soil to neutralise the acidity in the soil because lime is an alkaline and the right amount will neutralise the acid so that crops can grow healthily.

LIME is Calcium hydroxide , Ca (OH)2, is a base with a pH of more than 7.

When a soil is acidic ,pH less than 7, e.g. following acidic rain, plants and crops have difficulties to grow or even survive.

To neutralise the acidic soil the addition of relatively cheap Lime proves to be very effective to restore the pH to neutral-- A sine qua non for plants and crops to grow well.

Two reasons, to the reduce the acidity, ( which increases the ph, not lowers it! ) and also in a clay soil it enables it to be worked more easily giving it a better crumb structure.
