I would go for quick simple dinners like a jacket potatoe with various fillings, or a piece of quiche with a bit of salad and save the bigger dinners for the wkends. Or make a big pot of chilli con carne or a curry and have it during the week so all you have to do is heat it up.

I only cook big meals like that when the whole family is home together which is hard when your husband works until 2am and you have a teenage daughter. So most times, it's something quick like spaghetti or hamburger helper during the week and lavish meals on Sundays.

I live on my own and it totally depends what mood I am in. I am a chef by trade so I don't lack inspiration but sometimes it is the last thing I want to do when I get home. If I have the time and I'm feeling good I'll buy all the trimmings and fix myself something really good but it really is a lot of effort for one person. Today I had Cheese and sweetcorn toasted sandwiches with onion jam. Simple and yummy!

I cook whatever goes in the microwave or takes less than five minutes on the stove. I've never been one for cooking real meals...

nothing lavish:some pasta with chopped tomatoes and GOOD parmesan cheese-not the one in a can or carboard dispenser ,the one that comes in a chunk and you grate.
i try to eat salmon because of all its good properties,i just grill it and i always eat fresh vegetables too.
or i have quesadillas a tortilla with cheese on the pan it goes ,the cheese melts i add salsa and yummy!

Yummy things my hubby doesn't like such as toaster waffles or soup. Okay, maybe NOT so yummy but quick and stuff I like.
