There are is number of websites proposing holiday rentals in France. The one with the most offers is Gites de France, a national association that has thousands of members in France:

Actually, Gites de France has one website per region. They are not all well organized and it is sometimes a pain to search a rental on them.

try cheznous.co.uk or could be com. They are so cheap...and you can see inside of the gite. We had a gite in july for 2 weeks for £500 and it was bloody lovely.
