Both these words have stress on the first syllable (in Brit Eng) so the other vowels of each word are unstressed.

in "parallel" the first vowel [expressed by an "a"] is stressed, the following two are not;
in "jewellery" the first vowel, too, is stressed, the following two are not, although there are three more vowels in the script.

Its the last vowel sounds that are quite in both cases.
