How much would a well-known author get paid (per word) for publishing in a nationally-distirbuted weekly like The New Yorker, or a monthly like Esquire? How much would a previously unknown writer expect to make from being published in the same magazines?

That would be hard to tell. Since I am a previously unknown writer but have never submitted my work I could not tell you but obviously there would be a difference. I would think a previously unknown writer would get a penny a word and a well known writer may get a nickel or dime a word.

Use http://www.411.com to find phone numbers for these organizations and call an editor. Ask them how much, they may tell you they may not. if you promise not to quote them you may get an off the record response.
