I've tried good old-fashioned elbow grease, and scrubbing with a scourer. Also soaking overnight in dish-washing liquid and water. It gets a small amount off but doesn't do the job properly. Any suggestions? The pan cost me a small fortune, so I don't want to throw it away without a fight!

Try adding a small amount of dish soap and water (enough water to cover the baked on stuff) to the pan. Put the pan on the burner and bring the soapy water to a simmer. Let the pan simmer for a while, scraping the baked on food frequently. Make sure you keep an eye on your pan, you don't want to let all on the water simmer out and re-bake your baked on food. This works for me every time.
Note: If you have a thick layer of baked on food you may have to empty the pan after scraping a lot off and refill it with clean soapy water and simmer again.

I ran into that a couple of times. What I did was heat the pan, then put a couple of drops of dish detergent and lots of water in it. That more or less broke everything away from the pan. After I let it sit and soak while I was doing other chores, I went back and finished scrubbing it out- and used baking soda and a scrubbing sponge.

Boy do I know how you feel! It might take several treatments but this is how to remove burnt food. Fill with water and let soak, you might need to soak overnight. Then take a spoon or spatula and scrap the burnt food. If still really think re soak. After soaking/scrapped use a sos pad to remove the burnt food. This works for me all the time. Good luck !

I heard once to put salt and a small amount of water to cover the bottom and let set over night and that will help get it off easier. Good luck.

sounds odd but it works.
put coca cola in the pan and let it boil. it will come off infront of your eyes
