I know probabilities is to calculate the liklihood of an event. Is this also used to mathematically record the actual occurance of the event, and creating a math pattern of the event over time?

I think that I understand what you said.

If you think that you know what statistical distribution fits the data you can compare observations to predictions in what's known as 'goodness of fit'.

What you call a 'math pattern of event over time' is just such a distribution.

Yes, it is used extensively in Statistical Quality Control.
