Leeches (hirudo officinalis) were widely used (and are, to a small degree, still used), for example to clean wounds from infected blood and lymph. Leech collectors supplied leeches to pharmacists and physicians. I think most leeches used today are bred in labs, so no more jobs for leech collectors.
